French Toast
Makes 12 slices.
Ingredients
- 1/4 cup all-purpose flour
- 1 cup milk
- 1 pinch salt
- 3 eggs
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon white sugar
- 12 thick slices bread
Directions
Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth. Heat a lightly oiled griddle or frying pan over medium heat. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Makes 8 pancakes.

- 2 tsp vegetable oil
- 4 oz bacon
- 1 cup yellow onion, large dice
- 1 cup carrots, large dice
- 1 cup celery, large dice
- 1/2 tsp cumin
- 1/4 tsp dried thyme
- salt and pepper to taste
- cayenne to taste
- 1 1/4 cup black lentils
- 5 to 6 cups chicken broth, or as needed
- 1 bay leaf
- 1/4 cup chopped Italian parsley
- 1 tsp extra good extra virgin olive oil

- Add onion, celery, carrots, pinch of salt. Cook until tender. 10 minutes

Potato Leek Soup

Ingredients
- 8 cups chicken stock
- 6 russet potatoes, peeled and cut into large pieces
- 4 leeks (whites only), thoroughly washed and sliced
- 3 stalks celery, roughly chopped
- 1 bay leaf
- 1 1/2 teaspoons finely chopped fresh thyme
- Salt and freshly ground pepper
- 1 cup heavy cream
Directions
- Put the chicken stock, potatoes, leeks, celery, bay leaf and thyme in a large pot and sprinkle with salt and pepper. Boil until the potatoes are soft, 15 to 20 minutes.
- Remove the bay leaf. Using an immersion blender (or in batches in a blender or food processor), blend the soup until smooth. Pour the soup into a medium pot; add the cream and simmer until the soup has thickened, about 20 minutes.

Broccoli Cheese Soup

Ingredients
- 1/2 cup unsalted butter
- 1 yellow onion, finely chopped
- 1/3 cup all-purpose flour
- 4 cups whole milk
- 2 cups half-and-half
- 4 heads broccoli, stems removed and discarded, and florets cut into bite-size pieces
- Pinch of nutmeg
- 12 ounces mild cheddar cheese, shredded (about 3 cups)
- Salt and pepper
- 2 cups vegetable broth
Directions
- In a large pot or Dutch oven, melt butter over medium heat. Add the onions and cook for 3 to 4 minutes, until they begin to soften. Sprinkle the flour over the onions and stir to combine, cooking for about 1 minute. Slowly whisk in the milk and half-and-half.
- Add the nutmeg, broccoli, a dash of salt, and lots of freshly ground black pepper. Cover and reduce the heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Add the cheese a handful at a time, stirring to melt the cheese after each addition.
- At this point I did a quick pass with my immersion blender on low to blend up the broccoli a bit, but still leave a good amount of texture. You could also choose to mash it with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. Finally, whisk in the vegetable broth, and re-warm over low heat if needed, and serve.
Ham and Potato Soup
Ingredients
- 1 1/2 lb gold potato (or any other kind will work)
- 1 onion
- 1 carrot
- 1 celery
- 8 oz diced smoked ham
- 3 cloves garlic
- 3 tbsp butter
- 1/4 cup flour
- 4 cups chicken broth
- 2 cups water
- 1/2 cup cream
- salt and pepper to taste
- cayenne
- chives
Directions
- Dice onion, carrot, celery, and ham. Cook in medium heat with butter in a stock pot for 5-6 minutes until vegetables are tender and onions translucent.
- Add in flour and cook for 3 minutes
- Drizzle cold chicken broth and stir to avoid lumps
- Add water. Raise to medium-high and simmer for 15 minutes
- Dice potatoes. Ensure the broth is salty enough before dumping it in.
- When potatoes are ready (mushable), take a potato masher and mash it a dozen times to thicken
- Season with cayenne, black pepper. Adjust for salt. Add a splash of cream.
- Stir and serve.
- Garnish with chives and cheddar
Black Bean Vegetable Soup

- 1 pinch freshly grated nutmeg

For the spinach:
- 2 teaspoons olive oil
- 12 ounces baby spinach leaves

- 3 tablespoons all-purpose flour

- 2 cups cold milk, divided
- 2 teaspoons lemon zest
For the rest:
- 1 tablespoon butter
- salt and ground black pepper to taste
- 1 pinch cayenne pepper, or to taste
- 2 pounds boneless cod fillets
- 1/2 lemon, juiced
- 1 tablespoon chopped fresh chives for garnish

- Bring a large saucepan of salted water and to a boil; add 3 russet potatoes to boiling water and cook until very tender, about 20 minutes. Drain well. Mash in 3 tablespoons butter until thoroughly combined. Season with nutmeg, salt, black pepper, and cayenne pepper to taste. Mash 1/2 cup milk into potato mixture until smooth.

- Bake in the preheated oven until bubbling, about 40 minutes. Turn on oven's broiler and broil until potato crust has a golden brown top, about 2 minutes. Fish should flake easily. Let stand 10 minutes before serving. Garnish with a sprinkle of chives.
Pan Grilled Steak
- Season with salt and pepper on both sides
- Bake at 250 F for 20 - 30 minutes or until the internal temperature is 90 - 95 F
- Heat pan or skillet with oil. It should sizzle when water is flicked on
- Flip steak every few minutes until internal temperature is around 135 F (for medium rare)
- let rest for 5 minutes
Notes: I baked for 20 mins at 275 and the internal temp was almost 130... Try using a lower heat and shorter duration? (steak was from fridge, maybe as thick as my thumb.)
Grilled Chicken Breasts
Ingredients
- 3 Raw boneless skinless chicken breasts
- Salt and pepper, to taste
- Dried oregano - about 1/8 teaspoon per chicken breast
- Dried basil - about 1/8 teaspoon per chicken breast
- Granulated Garlic - about 1/4 teaspoon per chicken breast
- Cooking spray or oil of your choice (high smoke point oil like avocado, coconut or even canola is best)
Instructions
- Preheat oven to 350 degrees F.
- Add seasonings to both sides of the raw chicken breasts.
- Spray indoor grill pan with cooking spray, and preheat on the stovetop over medium high heat for about one minute.
- Place the chicken breasts on the hot grill pan.
- Cook on the first side for about 4 minutes, and turn the chicken breasts over on the other side.
- Cook on the second side for about two minutes, and then place the grill pan into the preheated oven. (Note: you can transfer to any other baking dish if you need to. For example, if your grill pan won't fit in your small oven)
- Cook in the oven for about 20 minutes, until chicken is cooked all the way through.
- Let the chicken rest for 5 minutes before serving.
Chicken Bake

- 2 tablespoons olive oil
- 2 cloves garlic, crushed and finely chopped
- 1/4 teaspoon crushed red pepper flakes, or to taste
- 6 skinless, boneless chicken breast halves
- 2 cups prepared marinara sauce
- 1/4 cup chopped fresh basil
- 1 (8 ounce) package shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese, divided
- 1 (5 ounce) package garlic croutons

- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
- Arrange the chicken breasts in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
- Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. Chicken Cordon Blu-wich

- 2 tablespoons dry bread crumbs
- 1 teaspoon butter, melted
- 2 tablespoons butter
- 1/2 cup diced smoked ham
- 1/2 cup diced onion
- 1/4 teaspoon dried thyme
- 2 tablespoons all-purpose flour

- 1 tablespoon milk
- 1/2 cup shredded Gruyere cheese

The meatballs didn't have as much flavour as I wanted. Tasted only like ground beef... Otherwise, the sauce was decent, though 28oz of whole tomatoes is a bit excessive for this recipe as there were more tomatoes than meatballs.

Strawberry Granita
Ingredients
- 2 pounds ripe strawberries, hulled and halved
- 1/3 cup white sugar, or to taste
- 1 cup water
- 1/2 teaspoon lemon juice (optional)
- 1/4 teaspoon balsamic vinegar (optional)
- 1 tiny pinch salt
Directions
- Rinse strawberries with cold water; let drain. Transfer berries to a blender and add sugar, water, lemon juice, balsamic vinegar, and salt.
- Pulse several times to get the mixture moving, then blend until smooth, about 1 minute. Pour into a large baking dish. Puree should only be about 3/8 inch deep in the dish.
- Place dish uncovered in the freezer until mixture barely begins to freeze around the edges, about 45 minutes. Mixture will still be slushy in the center.
- Lightly stir the crystals from the edge of the granita mixture into the center, using a fork, and mix thoroughly. Close freezer and chill until granita is nearly frozen, 30 to 40 more minutes. Mix lightly with a fork as before, scraping the crystals loose. Repeat freezing and stirring with the fork 3 to 4 times until the granita is light, crystals are separate, and granita looks dry and fluffy.
- Portion granita into small serving bowls to serve.
