Extracting a specific subtitle from a MKV file is very easy with MKVToolNix. Do not bother with the MKVExtractGUI-2 as it is not compatible with recent versions of MKVToolNix.
Use [[MKVCleaver]] in conjunction with MKVToolNix to extract subtitles. MKVToolNix doesn't appear to let you extract specific tracks or subtitles as a .srt but still encapsulates it inside the MKV container.
 
#Download and install MKVToolNix.
#Run the MKVToolNix-GUI tool and load the MKV you wish to extract subtitles from.
#Deselect every component except for the desired subtitle.
#Change the export file extension from .mkv to .srt and
#Click 'Start multiplexing'.

MKVToolNix is an open source tool that lets you inspect, modify, or generate mkv files. It is capable of extracting components of an existing mkv such as subtitles, audio tracks, or video.
